Mel and Mal's Harradine Stuff

Ingredients
  • 1 tin of Italian chopped tomatoes
  • 2 tbsp of tomato puree
  • 1 tbsp Worcestershire sauce
  • 150g Mature Cheddar, grated
  • 1 large egg
  • Salt and Pepper to taste

A very old family recipe, simple to make, spread it on bread, crumpets - anything you fancy - my favourite is to spread it on a long stick of celery or pile it up on warm toast - great for a snack when dieting as there are hardly any calories at all in it - just leave out the cheese!

It all started with my Great Grandmother who wanted to use up the oddments in the larder. Why "Stuff"? Well Grandad could never quite remember how to refer it, so he just used to ask for "some of that stuff" - and " Stuff " stayed

Serves : 6        Prep/Cooking Time : 15mins

Tip : This is great for freezing, as it can defrost while you are out and then it is ready when you come home and want your supper!

Instructions

Using a large saucepan, tip in the tomatoes & the Worcestershire sauce and on a medium heat, cook for 3-4 minutes until slightly reduced

Add the tomato puree and stir in well, followed by the egg, then mix and cook for a further 5 minutes

Add the cheese whilst hot and stir until well combined together and season to taste.

Spoon into individual ramekin dishes, cover with clingfilm and place in the fridge for an hour.

Serve with your choice of...........whatever!
