Mel and Mal's What to do with Leftover Christmas Sprouts

Ingredients
  • 250g cooked brussel sprouts or fresh trimmed and thinly sliced and steamed
  • 1 tbsp oil
  • 1 small onion. thinly sliced or spiralized
  • 1 small red onion thinly sliced or spiralized
  • 100 g pancetta, cubed
  • 1 pack of feta cheese, cubed
  • 1 tbsp curry paste
  • Salt and pepper to taste

There are always plenty of sprouts left over so why not do something tasty with them on Boxing Day?
This curried recipe will ensure that even the kids will eat their sprouts this Christmas!

Instructions

Heat up a large wok or fry pan. Add the oil and turn up the heat until very hot

Add the pancetta and cook until crisp and then the onion and cook until soft.

Add the curry paste and stir, cooking on a medium heat, until the ingredients are coated

Now add the cooked brussel sprouts and combine and cook until the brussel sprouts are warmed through

Fold in the feta cheese and cook until melted

Season to taste with salt and pepper and enjoy with leftover turkey or ham
