Mel and Mal's Roasted Butternut Squash

  • 1 Whole Butternut Squash, deseeded, peeled and cut into large chunks
  • 2 tbsp of olive oil or similar
  • Salt and Pepper

When it is in season, butternut squash is a tasty alternative to potatoes and great if you are on a diet.

Serve with any meal at any time, delicious

Serves : 4        Prep/Cooking Time : 30 mins


Simply place all the butternut squash onto a large baking tray, drizzle over the oil or spray the light oil, give a liberal dose of sea salt and pepper and place in the oven at 200°C for around 20-25 mins
