Roasted Butternut Squash

When it is in season, butternut squash is a tasty alternative to potatoes and great if you are on a diet.

1 Whole Butternut Squash, deseeded, peeled and cut into large chunks
2 tbsp of olive oil or similar
Salt and Pepper


  • Simply place all the butternut squash onto a large baking tray, drizzle over the oil or spray the light oil, give a liberal dose of sea salt and pepper and place in the oven at 200°C for around 20-25 minutes.
  • It's as simple as that!.
