Bubble & Squeak

A great way to use up all those left over vegetables after the Sunday lunch.

We always have Bubble & Squeak on Boxing Day along with the turkey left overs. How come everything tastes even better the day after?!



1 tbsp butter or olive oil
4 rashers of streaky bacon, chopped
1 onion, finely sliced
15-20 cooked Brussels sprouts, sliced,
Leftover boiled cabbage, shredded
400g cold leftover mashed potatoes, or chopped roasted potatoes or both


  • Melt the fat into a large non-stick frying pan, until ho.
  • Add the bacon and cook until just cooked..
  • Add the onion to the bacon and toss together and cook until the onions have softened and the bacon crispy.
  • Add the sprouts and cabbage and let it heat through, cooking for around 5 minutes.
  • Now add the potatoes, mashed or chopped up roasties and mix it all together.
  • Press the mixture down and allow it to crisp up around the edges, then flip over.
  • Cook the other side for around 5 minutes until starting to brown.
  • Cut out rounds with a metal cutter but make sure you do this when you have browned both sides.
  • Serve immediately with left over chicken or turkey.
