Mel and Mal's Bubble & Squeak

  • 1 tbsp butter or olive oil
  • 4 rashers of streaky bacon, chopped
  • 1 onion, finely sliced
  • 15-20 cooked Brussels sprouts, sliced, or leftover boiled cabbage, shredded
  • 400g cold leftover mashed potatoes, or chopped roasted potatoes or both

A great way to use up all those left over vegetables after the Sunday lunch.

We always have Bubble & Squeak on Boxing Day along with the turkey left overs. How come everything tastes even better the day after?!

Serves : 6        Prep/Cooking Time : 30 minutes


Quick & Simple!

Melt the fat into a large non-stick frying pan and let it get hot, then add the bacon and brown this off.

Add the onion then the sprouts and/or cabbage and let it heat through for around 5 minutes.

Now add the potatoes, mashed or the chopped up roasties and mix it all together.

Press the mixture down and allow it to crisp up around the edges, then flip over and do that side too.

You can be clever and cut out rounds with a metal cutter but make sure you do this when you have browned both sides and are ready to serve. Its just a bit more delicate that way!
