Summer Fruit Couli

A delicious accompaniment to many desserts and pancakes but particularly nice over raspberry ripple icecream. Lovely!

You can keep this in the fridge in an airtight container for up to a week so you have it on tap when you need it.


The best way of pureeing fruit is to invest in a conical fine mesh stainless steel sieve - it makes the job so much easier and less messy



1/3 of a bag of frozen Summer Fruits (from any supermarket)
50g caster sugar
Juice of 1 lemon


  • Place all the ingredients into a small saucepan and keeping the heat low, cook the fruit and sugar together, until the sugar has dissolved.
  • Increase the heat and add the lemon juice and reduce the liquid by a quarter.
  • Taste for required sweetness and allow to cool.
  • Pour the mixture into a conical sieve, pressing through with a spoon into a clean bowl.
  • Discard all the remainder that will be inside the sieve
  • Allow to cool and then pour over the dessert of your choice.
