The combination of rich hazelnut and warming brandy makes this a popular dessert - quick and easy too!

You must avoid stirring during the sugar and water process as otherwise it will crystallize. You can swirl the pan without any detriment.

2 ripe peaches, halved and de-stoned
2 cup of white sugar
4 tbsp of cold water
4 tbsp of brandy
Small pot of double cream (or crème fraiche)
A little whipped cream for decoration
4 tbsp of Nutella

  • In a frypan, add the sugar to the water and cook on a low heat without stirring until the sugar turns to a golden syrup colour.
  • Carefully spoon the peach halves, skin side up, into the sugar mix.
  • Gently cook on a low heat for a further 2 minutes.
  • Turn the peaches and cook for a further 2 minutes.
  • Turn again so that the skin side is up, add the brandy and quickly ignite.
  • When the flame subsides, pour in the cream, swirl the pan carefully and slowly cook on a low heat until the cream starts to bubble.
  • At the last minute, just before you serve, take the pan from the heat.
  • Add the Nutella and swirl the pan so that it mixes into the sugar and cream.
  • Serve immediately with either whipped double cream, crème fraiche or a scoop of vanilla ice cream, topped with a little drizzle of Nutella.
  • Yummy!
