Mel and Mal's No Bake Rocky Road

  • 400g dark chocolate
  • 300g unsalted butter
  • 7 tbsp golden syrup
  • 150g plain rich tea biscuits
  • 150g digestive biscuits
  • 75g Rice Crispies
  • 75g hazelnuts,
  • 100g dried apricots, chopped
  • 75g Mini marshmallows

A family favourite, sweet and naughty and loved by all.

The sweetness of the mixture of fruit, marshmallows and hazelnuts makes this a real tasty morsel - and dead easy to conjure up. Get the kids involved, no cooking required!

Melt the Chocolate

Place the dark chocolate into a large mixing bowl with the butter and syrup and set over a saucepan of gently simmering water until melted, stirring until blended.

Add the crunchy bits

Break the biscuits into small pieces by placing in a plastic bag, secured and bashed with a rolling pin.

Stir the biscuit pieces, along with rice crispies, hazelnuts, apricots and mini marshmallows into the chocolate mixture.

Press, chill and eat!

Line an 28cm x 12cm rectangular shallow baking tray with baking parchment and pour the mixture into the tin. Level the top, pressing down well with the back of a spoon, then chill for 2 hours

To serve carefully turn out of the tin and remove the baking parchment and cut into 24 squares
