No Bake Rocky Road

The sweetness of the mixture of fruit, marshmallows and hazelnuts makes this a real tasty morsel - and dead easy to conjure up. Get the kids involved, no cooking required!



400g dark chocolate
300g unsalted butter
7 tbsp golden syrup
150g plain rich tea biscuits
150g digestive biscuits
75g Rice Crispies
75g hazelnuts,
100g dried apricots, chopped
75g Mini marshmallows


  • Place the dark chocolate into a large mixing bowl with the butter and syrup.
  • Set over a saucepan of gently simmering water until melted, stirring until blended.
  • Break the biscuits into small pieces by placing in a plastic bag, secured and bashed with a rolling pin.
  • Stir the biscuit pieces, along with rice crispies, hazelnuts, apricots and mini marshmallows into the chocolate mixture.
  • Line an 28cm x 12cm rectangular shallow baking tray with baking parchment.
  • Pour the mixture into the tin, level the top, pressing down well with the back of a spoon.
  • Chill for 2 hours.
  • To serve carefully turn out of the tin and remove the baking parchment and cut into 24 squares.
