A favourite BBQ, supper or tea time dish for the kids but if you want to make it an "adult" supper, just add a few more exotic ingredients, such as hot chilli sauce, endive salad, gherkins etc - you know - all the stuff that kids turn their noses up at!

This is a great way to use up any stale bread that you have laying around - and a lighter option than the traditional burger bun

Serves : 6        Prep/Cooking Time : 1hr

Tip : If the BBQ is out of bounds, use a griddle pan rather than a normal frypan is much healthier as the fat runs away into the grooves at the bottom. Also better to oil the meat rather than the pan

Prepare the Burger Mix

Using a food processor, first zap the bread to make breadcrumbs and reserve.

Place all the other ingredients for the burger into the food processor and zap until well mixed together.

Add the breadcrumbs and zap again

Take the mixture out of the processor and make into 6 large balls and using the palm of your hand, flatten out to 1" thickness. Allow to rest for 15 minutes.

Cook your Burgers and Make your Toast

Heat a hot griddle pan until hot, brush the burgers with a little olive oil on both sides and place into the griddle pan and cook until golden brown for around 10 mins.

Turn over and cook for a further 10 minutes until cooked through and golden brown.

In the meantime, whilst the burgers are cooking, start making the toast. You will have to do this next step in batches under the grill - lightly brush both sides of the bread with a little olive oil and just toast until the bread starts to go light golden brown, then turn it over.

Continue to do this until all the bread has been toasted and then keep warm wrapped loosely in foil.

Assembly Line

When ready to serve, place a slice of toast on the plate, place the burger on top of the toast, followed by 2 slices of cheese, tomato, a ring of onion, a dollop of ketchup, then place a second piece of toast on the top and push a wooden skewer through the middle to hold it all together

Place the rocket on the top, then drizzle some olive oil on top of the rocket,
Serve with chunky chips and season to taste
