Mel and Mal's Cajun Chicken Pieces

  • 8 chicken thighs or drumsticks
  • 1 tbsp olive oil
  • 2 lemons, zest and juice of
  • 1 tbsp cajun spice
  • Salt
  • 30g butter

This very tasty way of serving chicken can be cooked on a BBQ using a griddle pan in the same way as if you were cooking in your kitchen

The cajun spices give a wonderful aroma and taste and the lemon juice & zest cooks to make a real zingy crispy finish to the chicken

Serves : 4        Prep/Cooking Time : 40 mins

Tip : Remember to test your chicken is done by pushing a skewer in the deepest part and if the juices run clear, it is good to eat. There should be no pinkness - if there is, you should cook for a little longer and test again


Preheat the oven to 200°C

Heat a cast iron griddle pan until hot

Meanwhile, in a bowl mix the cajun spice with the lemon juice and half of the lemon zest.

Brush the olive oil all over the chicken then place it skin side down into the hot griddle pan and sear the meat for 2 minutes. Turn over and do the same on the other side

Remove the chicken and keep it warm, then place the butter into the griddle pan and allow it to melt on a low heat

Finish up

When melted, pour in the spice and lemon mixture and blend it together by tilting the pan backwards and forwards.

Place the chicken into a Large Roaster and pour the pan juices over the chicken and place in the oven at 200C for 25 mins or until the chicken is cooked through.

Serve with vegetables of your choice
