Mel and Mal's Beetroot Dip

Ingredients
  • 2 tbsp tahini
  • 2 tbsp almond butter
  • 75g walnuts
  • 4 cooked beetroot
  • 2 tbsp extra virgin olive oil, plus extra to drizzle
  • 2 cloves garlic, crushed
  • 1/2 tsp sea salt
  • 1 tbsp chopped flat leaf fresh parsley
  • Carrots, red pepper or any vegetables you like, cut into sticks to serve

A lovely dip - great for those Christmas and New Years Eve party buffets! I was demoing Smeg products in Bentalls Kingston and absolutely loved it so this is courtesy of the iconic Smeg!

Serve as a side dish or with melba toast or thick kettle chips.

Serves : 4        Prep/Cooking Time : 5 minutes

Instructions

Zap!

Place all the ingredients except the parsley in a bowl of a food processor or a blender and blitz for 2 minutes until completely smooth

Place in a shallow bowl drizzle a little more olive oil and scatter the chopped parsley over the top. Lovely.
