Griddled Honey & Orange Chicken with Vegetables

This is a great recipe if you are on a diet as all the food is griddled. The honey is the only sweetness apart from the oranges and in my book, its a natural sweetener so can't be too bad for you - Mother Nature says so!

By using the honey and juices of oranges will give the meat a gorgeous colour and flavour - and sticky too!


The secret for well seared meat is to get the griddle really hot and add oil to the food BEFORE putting it on the griddle. Great for when you have a BBQ too



4 chicken breasts, skinless
2 large yellow bell pepper, deseeded and thickly sliced
16 small cherry tomatoes, kept whole
4 tbsp of runny honey
Salt and pepper
Olive oil for frying
1 tsp of dried mixed herbs
The juice from 2 oranges


  • To make a dry rub - Mix the herbs, salt and pepper in a spice mill and grind down to a fine dust.
  • Rub into the chicken and allow to rest for 30 minutes.
  • Using a cast iron griddle pan, heat up until hot.
  • Preheat the barbeque or griddle and the chicken on the griddle then drizzle over with olive oil and sear on both sides.
  • Mix the honey and orange juices together in a silicone mixing bowl.
  • Using a pastry brush, baste the chicken 3 or 4 times during its cooking period.
  • Reduce the heat to low/medium, and cook till the chicken is cooked through.
  • Place the chicken into a warm dish, pour over the juices from the griddle pan.
  • Cover the dish with lid and keep warm.
  • Put the peppers and tomatoes in a bowl with a tbsp of olive oil and mix in well.
  • Reheat the griddle pan until hot.
  • Carefully place the tomatoes and peppers onto the heat until cooked through a slightly seared.
  • Place the chicken on a plate, surround with the vegetables.
