Mel and Mal's Eton Mess

Ingredients
  • 1 punnet of fresh strawberries, hulled and cut into quarters except for 6 strawberries which you need to leave whole
  • 8 meringue nests (bought or home made!) broken up into chunks
  • 500ml of double cream, lightly whipped
  • 6 sprigs of fresh mint

An easy dessert at any time but a must in summer, done in 5 minutes and it looks impressive too!

Eton Mess is a quintessentially English dessert, and is traditionally served at Eton College's annual cricket game against the students of Winchester College. The dish has been known by this name since the 19th century so you are eating a little bit of history here!

Serves : 6        Prep/Cooking Time : 15mins

Tip : It is best not to mix all the ingredients together until you are absolutely ready to serve it as the juices from the fruit can make the Meringues go soggy if left standing for a while

Instructions

Remember - don't do this until you are ready to serve!

Break the Meringues into pieces (not too small) and place into a large bowl, then fold them gently into the whipped cream

Add the chopped strawberries and again, fold them into the meringue and cream

Serve in individual sundae dishes and garnish with a whole strawberry and a sprig of mint
