An easy dessert at any time but a must in summer, done in 5 minutes and it looks impressive too!

Eton Mess is a quintessentially English dessert, and is traditionally served at Eton College's annual cricket game against the students of Winchester College. The dish has been known by this name since the 19th century so you are eating a little bit of history here!


It is best not to mix all the ingredients together until you are absolutely ready to serve it as the juices from the fruit can make the Meringues go soggy if left standing for a while



1 punnet of fresh strawberries washed and hulled
1 tbsp Kirsch
8 meringue nests (bought or home made!) broken up into chunks
500ml of double cream, lightly whipped
6 sprigs of fresh mint


  • Remember - don't prepare this dessert until you are ready to serve as the meringue will go soggy!!
  • Reserve 6 whole strawberries for decoration.
  • Halve the smaller strawberries and quarter the large ones and place into a mixing bowl,
  • Pour over the Kirsch and allow to rest for 5 minutes.
  • Place the Meringues in with the strawberries and fold in.
  • Fold in the whipped cream
  • Serve in individual sundae dishes and garnish with a whole strawberry and a sprig of mint.
  • Serve immediately and enjoy!
