Cheeseburger Toastie

Cheeseburger Toastie

A favourite BBQ, supper or tea time dish for the kids but if you want to make it an "adult" supper, just add a few more exotic ingredients, such as hot chilli sauce, endive salad, gherkins etc - you know - all the stuff that kids turn their noses up at!

This is a great way to use up any stale bread that you have laying around - and a lighter option than the traditional burger bun.

If the BBQ is out of bounds, use a griddle pan rather than a normal frypan is much healthier as the fat runs away into the grooves at the bottom. Also better to oil the meat rather than the pan

A little olive oil to brush the burgers before cooking

A handful of rocket leaves

  • Toast until the bread starts to go light golden brown, then turn it over and toast the other side..
  • When ready to serve, place a slice of toast on the plate, place the burger on top of the toast.
  • Add 2 slices of cheese, a sliced tomato, a ring of onion and a dollop of ketchup.
  • Place a second piece of toast on the top.
  • To secure, push a wooden skewer through the middle to hold it all together.
  • Place the rocket on the top, then drizzle some olive oil on top of the rocket,
