Cajun Chicken Pieces

This very tasty way of serving chicken can be cooked on a BBQ using a griddle pan in the same way as if you were cooking in your kitchen

The cajun spices give a wonderful aroma and taste and the lemon juice & zest cooks to make a real zingy crispy finish to the chicken


Remember to test your chicken is done by pushing a skewer in the deepest part and if the juices run clear, it is good to eat. There should be no pinkness - if there is, you should cook for a little longer and test again.



8 chicken thighs or drumsticks
1 tbsp olive oil
2 lemons, zest and juice of
1 tbsp cajun spice
30g butter


  • Preheat a barbeque or cast iron griddle pan until hot.
  • Meanwhile, in a bowl mix the cajun spice with the lemon juice and half of the lemon zest.
  • Brush the olive oil all over the chicken, then place it skin side down into the hot griddle pan.
  • Sear the meat for 2 minutes, then turn over and do the same on the other side.
  • Remove the chicken and keep it warm.
  • Place the butter into the griddle pan and allow it to melt on a low heat.
  • Pour in the spice and lemon mixture, blend it together by tilting the pan backwards and forwards.
  • Place the chicken into a large roaster and pour the pan juices over the chicken.
  • Place in the oven at 200C for 25 mins or until the chicken is cooked through.
  • Serve with vegetables of your choice.
