  • 1 very small red onion finely diced
  • 3cm fresh ginger, peeled and shredded
  • 1 large carrot peeled and shredded
  • 2red chillies, de-seeded and finely diced
  • ΒΌ tsp dried chili flakes
  • 175 ml water
  • 175ml rice wine vinegar
  • 175 ml Heinz tomato ketchup
  • 2 slices of fresh pineapple, prepared and chopped
  • 6tbs runny honey
  • 1tsp Worcestershire sauce
  • 3tbs cornflour, mixed in a little water

I love making my own sauces and this one is a particular favourite of mine

I always find that this sauce is delicious with either pork or chicken as it really brings out the flavour of the meat.

Serves : 4        Prep/Cooking Time : 15 mins

Tip : You can use tinned pineapple chunks if the fresh variety is not available.

Place the groundnut oil into a saucepan and heat up

Add the garlic, onion, ginger, carrot, chillies and chili flakes and fry until softened

Add the water, rice vinegar, tomato ketchup, pineapple, Worcestershire sauce and the honey, bring to the boil and allow to simmer for 5-7 minutes

Add the cornflour paste and continue to simmer, stirring all the time until the sauce thickens. Either remove from the heat until your pork is cooked or pop in a container and keep in the fridge until you are ready to use
