Mel and Mal's Sweet & Sour Pork Using a Steamer Case

Ingredients
  • For the Sweet & Sour Sauce:
  • 1tbsp corn flour
  • 1tbsp white wine vinegar
  • 2tbsp caster sugar
  • 1tbsp tomato sauce
  • 2tbsp light soy sauce
  • 1 can of pineapple and the juice
  • For the Meat:
  • 2 tsp peanut oil
  • 1" grated ginger
  • 2 cloves garlic
  • 500g loin of pork, any fat removed and cut into 1" cubes
  • 1 onion, chopped
  • 1 red pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • I red pepper, sliced
  • 4 spring onions, sliced
  • 25g green beans, topped and tailed and cut in half
  • Salt and freshly milled black pepper

Although you can do this on the hob top, the microwave is by far quicker and gives you a lovely meal in literally minutes.

We used the Lekue Steamer Case to cook this as it retains all the flavours and ensures that the pork is soft and juicy.

Instructions

Make the Sauce

First make the sweet and sour sauce, by mixing the cornflour with the white wine vinegar in a bowl.

Add all the remaining ingredients, and mix in to combine together and then put aside

Cook the Meat

In a very hot wok, add the peanut oil, and heat up until hot. Add the grated ginger and the garlic and cook for 30 seconds, stirring all the time.

Add the loin of pork and cook for 2 minutes until brown all over. Add the onion and cook for a further 1 minute

Carefully add all the ingredients to the Lekue steamer case. Then add all the other ingredient and mix together

Now pour over the sweet and sour sauce and mix in with the rest of the contents.

Close the lids of the steamer case and either place in the microwave and cook on full power for 5 minutes, or until the pork is cooked through, or in a preheated oven for 12-15 minutes,

Serve immediately along with boiled rice
