Pork Provencal

Full of flavour this colourful dish is a family favourite. It's quick and easy to make and one that you will keep in your repertoire to fall back on.

4 pork steaks/chops
1 onion, peeled and chopped
2 cloves garlic peeled and finely chopped
1 red pepper, cored and finely chopped
1 yellow pepper, cored and finely chopped
1 finely chopped courgette
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
1 can Italian chopped tomatoes
Sea salt and freshly ground black pepper
4 slices of mature cheddar cheese
2 tbsp olive oil


  • Fry the onions and the garlic in the oil for 5 minutes and when softened
  • add the red and yellow pepper, courgette, dried herbs, chopped tomatoes and salt and pepper.
  • This needs to simmer for around 20 minutes, softening the vegetables and soaking up all the flavour.
  • Let the sauce get simmering for 10 minutes then start to grill the pork.
  • Turn the chops occasionally to ensure even cooking and when they are almost there, put a good spoonful of the sauce on top of each chop.
  • Add a large slice of cheese on top of the pork and grill until the cheese begins to melt.
  • On individual plates, spoon a good dollop of creamy mash into the centre. Then using a large spatula, lift the pork onto the mash.
  • Serve with the remainder of the sauce and fresh seasonal vegetables.
  • Delicious.
