Serves : 4        Prep/Cooking Time : 30 minutes

Make the Sauce

Fry the onions and the garlic in the oil for 5 minutes and when softened
add the red and yellow pepper, courgette, dried herbs, chopped tomatoes and salt and pepper.

This needs to simmer for around 20 minutes, softening the vegetables and soaking up all the flavour.

Let the sauce get simmering for 10 minutes then start to grill the pork.

Turn the chops occasionally to ensure even cooking and when they are almost there, put a good spoonful of the sauce on top of each chop.

Add a large slice of cheese on top of the pork and grill until the cheese begins to melt.

On individual plates, spoon a good dollop of creamy mash into the centre. Then using a large spatula, lift the pork onto the mash.

Serve with the remainder of the sauce and fresh seasonal vegetables. Delicious.
