Mel and Mal's Loin of Pork on a bed of Vegetables

Ingredients
  • 4 loins of pork, trimmed and cubed
  • 6 spring onions, sliced at an angle
  • 1 clove of garlic, chopped
  • 2 yellow peppers deseeded and chopped into 1" pieces
  • 12 cherry tomatoes, halved
  • 12 button mushrooms, halved
  • 2 tbsp freshly chopped coriander
  • 1 tbsp freshly chopped thyme
  • 1 red chilli, deseeded and chopped
  • 1 tbsp sweet chilli sauce
  • 1/2 pack of frozen garden peas, cooked and cooled
  • Juice of one lemon
  • Salt and Pepper to taste
  • 1 tbsp olive oil

This is a quick and easy supper dish, on the table in half an hour.

Easy, nutritious and colourful, a dish to tempt even the kids! Cook in a large frypan or better still, in a wok.

Serves : 2        Prep/Cooking Time : 30 mins

Tip : If you fancy an extra texture to this dish, sprinkle over some fresh finely grated parmesan cheese and crushed croutons

Instructions

Sear the Pork

Place the oil into a large fry pan or wok and heat up, then add the pork and sear on all sides for around 4 -5 minutes. Remove from the pan and reserve

Saute the Veg

Add the spring onions, garlic, chillies and peppers to the pan or wok and toss into the juices left in the pan and cook for 5 minutes, making sure not to colour the vegetables, just soften them

Bring it Together

Return the pork to the pan with the veg and toss. Add the sweet chilli sauce and cook for a further 2 minutes

Finally add the fresh herbs and the peas, season to taste and squeeze on the lemon juice
