Roast the Potatoes and Sausages

Preheat your oven to 200°C.

Put the potatoes & onions into a large roasting tin and drizzle with olive oil. Roast for 10 minutes

Place the sausages in amongst the potatoes & onions so they are touching the bottom of the tin and roast for another 15-20 minutes, turning once during cooking, until they are brown all over.

Make the Sauce

Whilst the sausages are cooking, gently heat the marmalade, mustard and cider in a saucepan and cook until the marmalade has melted, stirring all the time.

Turn up the heat and let it boil for 2 minutes until the mixure has reduced by half.

Put it all Together

Remove the sausages from the oven, then pour over the sauce and toss gently together.

Scatter the rosemary sprigs on top and return to the over for a further 10 minutes until golden brown and the whole thing is sticky with the glaze of the marmalade.

Grind some fresh sea salt and black pepper over the top then serve
