Mel and Mal's Chicken with Chorizo and Peppers

  • 2tbsp olive oil
  • 8 chicken thighs with the skin attached
  • 1 round of chorizo sausage, skinned and chopped into 16 even slices
  • 2 white onions, peeled and quartered
  • 4 cloves garlic, crushed
  • 1/2 red pepper, yellow and orange peppers
  • 1 red chilli chopped
  • 2 sweet potatoes, peeled and roughly sliced
  • 1tsp dried mixed herbs
  • 1tbsp sweet chilli sauce
  • Salt and black crushed peppercorns to taste
  • 1tbsp fresh basil or flat leaf parsley

This is dead easy to make, looks good on the plate and is absolutely delicious. Your partner will be impressed!

Add a little more chilli if you like your food a bit hotter!

Serves : 6        Prep/Cooking Time : 35 minutes


Cook the Chicken

Preheat the oven to 190°C

Heat up a large fry pan, then add the oil and heat up until hot

Add the chicken thighs, skin side down and on a medium heat, sear the chicken until the skin is golden brown

Turn the chicken over, add the chorizo by placing between the chicken pieces and continue to cook for 2 minutes

Add the Rest of the Ingredients

Add the onions, garlic and the peppers, sweet potatoes, chilli and tuck in between the chicken and chorizo and continue to cook for 4 minutes

Add the mixed herbs, sweet chilli sauce salt and pepper and cook for 2 minutes

Finish in the Oven

Place the pan into the preheated oven and continue to cook for 12-15 minutes or until the chicken is cooked through

Serve with boiled rice and serve with a sprig of basil or parsley
