Sticky Syrup Sponge in the Microwave

A traditional light and fluffy sponge pudding but without the hours of steaming and done in minutes! Everyone will love this British favourite.

If you want to ring the changes, just add 1tbsp of your favourite flavouring such as ginger, coconut or cocoa to the sponge mix and beat in well.

Use jam if you prefer this to syrup. The choices are endless!


For the microwave, I would suggest using individual silicone pudding moulds as the puddings will never stick and each one will be perfectly cooked. However, you can use one large microwaveable pudding bowl if you prefer.



4tbsp Golden Syrup
100g plain flour
2 tsp baking powder
100g softened butter
50g soft brown sugar
50g caster sugar
2 large eggs
2tbsp buttermilk


  • Using 4 x individual silicone pudding moulds, pour the syrup into each of the bases of both moulds.
  • Sift the flour and baking powder into a large bowl and add all the other ingredients and beat with an electric mixer for several minutes until well blended and fluffy (if you are adding flavourings, add in here).
  • Pour the mixture into both moulds, then level the top with a pallet knife.
  • Place in the microwave and cook for 3 mins. (NOTE: timings may need to be altered depending on the wattage of your microwave).
  • Allow to rest for 1 minute, then check to see if they are ready - a skewer should come out clean. If there is residue, pop back in for a further minute and test again.
  • Leave to rest for a further minute then cover the mould with a dessert plate or dish. Holding it tightly, turn over and out with pop your the pudding with a lovely syrup top.
  • Serve with cream or a rich custard. Absolutely mouth watering!
