You can substitute in chicken instead of pork if you prefer and if you are a vegetarian, Quorn is a great substitute.
If you have any carrots, peas, cauliflower heads in the fridge, throw them in too for extra texture - anything goes!

Tip : Marinade the pork overnight for a rich deep flavour
Pour the oyster sauce and black pepper into a bowl and add the pork and marinade for at least 2 hours
Wash and drain the bamboo shoots
Wash and drain the spinach and dry with kitchen paper
Once the pork has marinated, heat the sesame oil in a wok and fry the drained pork for 3 minutes tossing frequently add bamboo shoots, courgettes and spinach
Add lime juice and sugar and simmer for 2 minutes
Season with salt and pepper
