Mel and Mal's Griddled Honey & Orange Chicken with Vegetables

  • 4 chicken breasts, skinless
  • 2 large yellow bell pepper, deseeded and thickly sliced
  • 16 small plum tomatoes (or cherry), kept whole
  • 4 tbsp of runny honey
  • Salt and pepper
  • Olive oil for frying
  • 1 tsp of dried mixed herb provence
  • The juice from 2 oranges

This is a great recipe if you are on a diet as all the food is griddled. The honey is the only sweetness apart from the oranges and in my book, its a natural sweetener so can't be too bad for you - Mother Nature says so!

By using the honey and juices of oranges will give the meat a gorgeous colour and flavour - and sticky too!

Serves : 4        Prep/Cooking Time : 45 mins

Tip : The secret for well seared meat is to get the griddle really hot and add oil to the food BEFORE putting it on the griddle. Great for when you have a BBQ too


Dry Rub

Mix the herbs, salt, pepper in a pestle and mortar and grind down to a fine dust

Rub into the chicken - this is called a Dry Rub

Griddle the Chicken

Using a cast iron griddle pan, heat up till hot, place the chicken on the griddle then drizzle over with olive oil and sear on both sides

Make the Basting Sauce

In the meantime, mix the honey and orange juices together in a silicone mixing bowl and using a pastry brush, baste the chicken 3 or 4 times during its cooking period.

Back to the Chicken

Reduce the heat to low/medium, and cook till the chicken is cooked through

Place the chicken into a warm dish, pour over the juices from the griddle pan
cover the dish with lid and keep warm

Put the peppers and tomatoes in a bowl with a tbsp of olive oil to ensure that they are thoroughly coated

Meanwhile, reheat the griddle pan until hot, then carefully place the tomatoes and peppers onto the heat until cooked through a slightly seared with the marks of the griddle pan

Place the chicken on a plate, surround with the vegetables and you have a delicious and healthy meal for 4
