Mel and Mal's Cheeseburger Toastie using the Halogen

  • For the Burgers:
  • 3 slices of white bread
  • 500g Best quality Beef Mince
  • 1 large white onion, quartered
  • 2 garlic cloves, skinned
  • 1tsp cumin seeds, crushed in a pestle & mortar
  • 1tsp mixed dry herbs
  • 2tbsp Worcestershire Sauce
  • 1tbsp sweet chilli sauce
  • 1 egg
  • Salt & ground black pepper to taste
  • A little olive oil to brush the burgers before cooking
  • For the Topping and Toastie:
  • 12 slices of bread, crusts removed
  • 6 slices of cheddar cheese
  • A handful of rocket leaves
  • 2 large beef tomatoes, thinly sliced
  • 1 large white or red onion, sliced thinly
  • Olive oil
  • Tomato ketchup
  • Salt and Pepper to taste

A favourite supper or tea time dish for the kids but if you want to make it an "adult" supper, just add a few more exotic ingredients, such as hot chilli sauce, endive salad, gherkins etc - you know - all the stuff that kids turn their noses up at!

This is a great way to use up any stale bread that you have laying around - and a lighter option than the traditional burger bun

Serves : 6        Prep/Cooking Time : 1 hr

Tip : Use the halogen oven to cook the burgers and the toast at the same time, this way you save time and energy.


Prepare the Burger Mix

Using a food processor, first zap the bread to make breadcrumbs and reserve.

Place all the other ingredients for the burger into the food processor and zap until well mixed together.

Add the breadcrumbs and zap again

Take the mixture out of the processor and make into 6 large balls and using the palm of your hand, flatten out to 1" thickness. Allow to rest for 15 minutes

Cook the burgers and Make the Toast

When ready to cook, brush the burgers with a little olive oil on both sides and place onto the lower rack and cook until golden brown for around 10 mins.

Turn over and cook for a further 8 minutes until cooked through and golden brown.

Place a slice of cheese onto each burger and let the cheese melt.

In the meantime, at the stage of turning the burgers for the first time, start making the toast. You will have to do this next step in batches on the top rack of the halogen - lightly brush both sides of the bread with a little olive oil and just toast until the bread starts to go light golden brown, then turn it over.

Continue to do this until all the bread has been toasted and then keep warm wrapped loosely in foil.

Assembly Line

When ready to serve, place a slice of toast on the plate, place the burger on top of the toast, followed by 2 slices of tomato, a ring of onion, a dollop of ketchup, then place a second piece of toast on the top and push a wooden skewer through the middle to hold it all together

Place the rocket on the top, then drizzle some olive oil on top of the rocket,
Serve with chunky chips and season to taste
