Braised Red Cabbage and Apple

It takes a while to cook but it is worth it, the smell during cooking is amazing

Ingredients

1 red cabbage, cored, quartered and tough outer leaves discarded
1 clove of garlic, peeled and crushed
1/2tsp ground cinnamon
1/2 tsp ground cloves
3tbsp brown sugar
Pinch of fresh grated nutmeg
2 small onions, peeled and thinly sliced
3 cooking apples, peeled, cored and chopped
1tbsp red wine vinegar
15g unsalted butter

Method

  • Preheat the oven to 150c, then thinly slice the cabbage
  • In a small bowl, mix the garlic, cinnamon, cloves, sugar and nutmeg
  • Arange the cabbage, onions, apples and spice mixture in alternative layers in a large dish
  • Pour over the vinegar and dab the butter on top
  • Cover with a tight fitting lid and cook for 2.5 hours, stirring a couple of times during cooking
