Mel and Mal's Perfect Rice

  • 1 tsp vegetable oil
  • 250g basmati rice
  • 500ml water or vegetable stock
  • ½ tsp salt

Cooking lovely fluffy rice is really easy when you know how! One of the most popular questions ask during my cooking demonstrations up and down the country is how to make perfect rice, and really it is so easy

The basic rule of thumb is to get the proportion of water to the amount of rice - two parts water to one part of rice and ensure that you leave the lid on permanently during the cooking process - the lid needs to be tight fitting so no steam is lost.

Serves : 6        Prep/Cooking Time : 20 minutes

Tip : To add a little something extra to plain rice, why not infuse the rice with finely chopped herbs such as basil & parsley. Just mix in when the rice is cooked


Prepare the Rice for Cooking

Use a large saucepan with a tight fitting lid, pour in the oil and heat gently before adding the rice, then ensure that the rice has had a good coating.

Add the water - it should cover the rice by 2 centimeters

Add the salt.

Cook to Perfection

Put the lid on tightly and bring to the boil

Reduce to simmer and continue to gently cook until the water has been absorbed this should take 15 minutes

If the rice is water logged, turn off the heat, take off the lid and drape a tea towel over the top of the saucepan to absorb the remaining water. It will sit quite happily like this for 30 minutes and then it can be fluffed up with a fork
