Mel and Mal's Chicken with rice and vegetables

Ingredients
  • 2 cups of basmati rice
  • 2 tsp salt
  • 1 tbsp olive oil
  • 2 chicken breasts, trimmed and cut into small cubes
  • 1 red pepper, very finely and evenly chopped
  • 1 yellow or green pepper, very finely and evenly chopped
  • A handful of sugar snap peas

This is a lovely supper dish, brightly coloured and very filling. It makes a firm favourite for children as it is looks enticing and they hardly notice the veg!

The softness of the perfectly cooked rice with the slight crunchiness of the peppers.

Do not be tempted to take the lid off the rice once you have started the process otherwise your rice will be soggy! Obey the rules and it will be light and fluffy!

Serves : 4        Prep/Cooking Time : 30 mins

Tip : For a simple and tasty accompaniment to curries and chops, simply remove the chicken from the recipe or add in prawns if you want a fishier dishy!

Instructions

Before starting, wash the rice several times. This removes all the "dust" that is formed as the rice settled in the bag

Place the rice in a heavy based saucepan and add enough cold water to cover the rice - it should be about 2cm above the surface of the rice.

Cover the pan with a tightly fitting lid and bring to the boil over a high heat then reduce the heat to a very low simmer and keep the lid on at all times.

Cook the rice for 20 minutes.

Remove from the heat and leave covered for a few more minutes to be sure that the water has been completely absorbed by the rice.

Prepare and cook the Chicken and Peppers

Whilst the rice is cooking, prepare the chicken by gently heating up a small fry pan with the olive oil until sizzling hot.

Add the chicken pieces and turn until seared all round. Reduce the heat and cook for a further 5 minutes.

Add the peppers then reduce the heat again to low and cook for a further 5 minutes.

Now add the sugar snaps and cook the until soft, but not coloured.

Add the two together

Remove the chicken, peppers and sugar snaps from the pan and add to the cooked rice.

Carefully mix together using a fork and fluff up the rice until the chicken and vegetables are evenly distributed amounts the rice grains.
