Mel and Mal's Red Velvet Cup Cakes

Ingredients
  • For the Cup cakes:
  • 250g plain flour
  • 2 tbsp cocoa powder
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 100g unsalted butter, softened
  • 200g caster sugar
  • 1 tsp red food colouring, heaped
  • 2tsp vanilla extract
  • 2 eggs, large
  • 175g buttermilk
  • 1tsp cider vinegar
  • For the buttercream:
  • 500g icing sugar
  • 125g cream cheese
  • 125g unsalted butter, softened
  • 1 tsp cider vinegar

I spent a happy day working with a lovely lady from Smeg baking and icing these delicious cup cakes, their own recipe.

Rich in colour and delicious to eat, these are a great tea time treat and perfect for Mothers Day. Get the kids involved!

Serves : 12        Prep/Cooking Time : 45 minutes

Instructions

Prepare the Mixture

Preheat the oven to at 170°C and prepare a 12 hole bun sheet with paper cases.

Combine the flour, cocoa, baking powder, and bicarbonate of soda in a bowl. Using a hand or standalone mixer, cream the butter and sugar until light and fluffy.

Add the food colouring and vanilla extract.

Gradually add the flour mix and eggs to the mixture.

Finally add the buttermilk and vinegar.

Bake & Trim

Pipe the mix into the cupcake cases, place the baking tray into the oven and bake for approximately 20 minutes until cooked through.

Whilst the cupcakes are cooling, mix together the icing sugar, cream cheese and butter. Lastly add in the cider vinegar and mix well.

Pipe the icing onto the cupcakes and enjoy!
