Mel and Mal's Date & Walnut Cake

  • 1 tbsp margarine
  • 175g caster sugar
  • 100g stoned dates, chopped
  • 75g walnuts, chopped
  • 1tsp bicarbonate of soda
  • 200ml of boiling water
  • 1 egg, beaten
  • 300g self raising flour, sifted

One of my all-time favourite cakes as it is so moist and rich in flavour.

Mel (a Yorkshire lass) loves hers with a bit of butter on a slice but being a southerner, I just like it on its own or with a bit of custard.

Serves : 8        Prep/Cooking Time : 2hrs

Tip : Bake in a silicone loaf mould (2lb) if you have one, as this will save you having to line a tin with greaseproof paper


Preheat the oven to 150°C

Put the margarine, sugar, chopped dates and walnuts and bicarb in a bowl

Add the boiling water and allow the margarine to melt

Add the beaten egg and the sifted flour and mix well

Prepare for the Oven & Serve

Spoon into a a lined 2lb tin and cook for 1.5 hours.

Check to make sure the cake is cooked using a skewer - if the skewer comes out clean, the cake is cooked inside

Serve with a little butter spread on each slice or just as it comes!
