Mel and Mal's Cup Cakes

Ingredients
  • 175g of stork margarine at room temperature
  • 175g vanilla caster sugar
  • 3 free range eggs at room temperature, lightly beaten
  • 175g self raising flour double sifted high over a large bowl
  • Icing flowers, sweeties to decorate
  • Optional:
  • 2 tsps vanilla extract
  • 25g cocoa powder

Homemade gifts are always the most appreciated and these cup cakes are no exception. Children love to bake and equally enjoy the trimming up so let them have their heads and get artistic with the piping bag and sweeties!

Using a basic Victoria Sponge cake mix, feel free to add a bit of cocoa to make them chocolate flavoured or a few drops of vanilla to add sweetness.

Serves : 12        Prep/Cooking Time : 45 minutes

Instructions

Make the Cake Mix

Preheat the oven to 180°C and prepare a 12 hole bun tin with paper cases.

Using an electric hand whisk beat (cream) the butter and the sugar together until pale in colour and light and fluffy (if you are adding vanilla extract, add in here)

Lightly beat a dessert spoon of flour and add a third of the egg mixture beating in in with the electric whisk

Add another 1/3rd of the egg and again beat into the mixture and finallly add the remainder of the egg mixture and beat in.

Sift the flour again into the creamed mixture and using a figure of 8 motion, lightly fold in the flour to incorporate it with the mixture, being careful not to knock out any air

Prepare for the oven and Bake

Using a metal spoon, place a heaped tablespoon of the cake mixture into each paper case, filling around 2/3 of the way.

Place in the oven and bake for around 15 minutes until the cakes are browned and springy to the touch.

Remove from the oven and place on a wire rack to cool completely

Decorate

You will need something to hold your decorations to the top of the cup cakes so simply make a little butter cream - this makes an excellent "glue".

When your cakes are trimmed up, place in an airtight container and they will keep for around 3 days.

Alternatively, pop individual cup cakes carefully into a cellophane sweetie bag and tie with a pretty ribbon as a gift for Mothers Day.
