Mel and Mal's Pancakes with Nutella, fruit and yoghurt

Ingredients
  • 2 hot pancakes
  • 1 tsp of icing sugar
  • 12 raspberries
  • Juice of 1 lemon
  • One pot of natural yoghurt
  • 3 tbsp of Nutella

A twist on the traditional lemon and sugar pancake but don't confine it just to Pancake Day - this is makes a delicious breakfast or dessert for both adults and kids.

Serves : 2        Prep/Cooking Time : 20 minutes

Tip : Use the fruit of your choice, whatever you fancy and substitute the yoghurt for Crème Fraiche is you prefer

Instructions

A few easy steps to perfection

Make your pancakes using the Pancake Batter Mix.

Whilst they are cooking away, using a small bowl, fold the raspberries into the yoghurt

Now place the just cooked pancake onto a warm plate and spread the Nutella over the whole of the pancake

Spoon the yoghurt mix onto half of the pancake, then fold the pancake over in half, then in half again to make a triangular shape.

Squeeze the lemon juice over the top and then dust with the icing sugar, then drizzle a little more Nutella over the top.
