Tip : Add a little biscuit crunch underneath the peaches to add some texture to the dish
Preheat the oven to 190°C
Heat up a heavy based saucepan and then melt the butter until bubbling.
Add the sugar and combine with the butter and cook for 2 minutes until bubbling hot and sticky.
Add the peaches, cut side down and cook for 5 minutes, spooning the hot sauce over the peaches.
Sprinkle over the brandy and ignite.
When the flames die down, stir in the double cream.
Place the pan, with the contents inside into the oven to bake for 15 minutes.
Finish with vanilla ice cream or whipped cream and serve immediately.
